Knowing how to make herb butter is such a good skill because it can be used in so many ways (slathered on all kinds of vegetables and meats) to add a real burst of flavour. I've packed both nasturtium leaves and flowers in this recipe to be spread generously on charred flatbreads.

When I first made this dish, it was just a matter of minutes after harvesting the veg. It was astonishing how good just a few fresh ingredients thrown together tasted. Lovage, a member of the parsley family, has intense celery and subtle aniseed flavours and is a herb I urge you to find a place at home.
